Inspired buffalo potato wedges

buffaloIf there are two things Will and I both enjoy, it’s good potato wedges and buffalo sauce. So when I read How Sweet Eats blog post on this delicious invention I knew I had to try it, too.

We gobbled up a plate of the stuff for lunch on Monday afternoon. Think super crispy french fries roasted in the oven. Then cover them in your favorite hot sauce, plenty of cheese, chives and dare I say it: dip it in ranch.

Recipe for buffalo potato wedges

  • 1 lb potatoes, cut into wedges
  • 1 tablespoon olive oil
  • 1/2 cup hot sauce
  • 1/2 teaspoon garlic powder
  • 1/4 cup crumbled blue cheese
  • 1/4 cup ¬†shredded cheddar cheese
  • 3 chives, chopped
  • ranch for dipping

Roast the potato wedges, tossed in the olive oil, in the oven at 400 degrees for about 45 minutes, flipping halfway through. When they are done, set the wedges in a bowl and toss with the remaining ingredients, except for the ranch, which is for dipping.

If you can limit your portion, this could also be a nice substitute for chicken wings.
